A Recipe that Screams Summer - Strawberry Yogurt Parfait


This is a light, refreshing and healthy dessert that's perfect for spring and summer. Add blueberries for a colorful and festive Fourth of July treat.

Strawberry Yogurt Parfait

  • 2 envelopes unflavored gelatin
  • 1 1/2 cups cold water
  • 1 10-ounce package frozen sliced strawberries with syrup
  • 1 1/2 cups fat-free frozen strawberry yogurt
  • 1 cup frozen light whipped topping, thawed
  • 1 cup fresh sliced strawberries
  • 2 teaspoons sugar

In small saucepan, sprinkle 1 envelope gelatin over 1 cup cold water; let stand 1 minute. Over low heat, stir until gelatin dissolves, about 5 minutes. Remove from heat; stir in frozen fruit until thawed. Spoon mixture into four 8-ounce parfait glasses. In another saucepan, sprinkle the remaining envelope of gelatin over the remaining 1/2 cup of water; let stand 1 minute. Stir over low heat until gelatin completely dissolves, about 5 minutes. Stir in frozen yogurt until melted. Spoon yogurt mixture over set fruit layer. Chill until firm, about 2 hours. Mix sugar with sliced strawberries. To serve, garnish with whipped topping and strawberries. Makes 4 servings.
