Happy Birthday America! This festive dessert couldn’t get much easier to make. It looks great and tastes even better with the antioxidant-packed berries on top. You can change it up by substituting lemon flavored gelatin and yogurt for the strawberry flavor if you desire, but still keep the red, white and blue theme. Enjoy celebrating the 4th of July!"
- 1/4 cup water
- 1 package (4-serving size) sugar-free strawberry-flavor gelatin
- 2 containers (6 oz.) fat-free, light strawberry yogurt
- 1 tub (8 oz.) frozen fat-free, non-dairy whipped topping, thawed
- 1 ready-made, reduced-fat graham cracker pie crust
- 8 small whole strawberries
- 1 cup fresh blueberries
In microwave-safe measuring cup, heat water on high (100% power) for 45 seconds to 1 minute or until boiling. Whisk in gelatin until dissolved. In large bowl, whisk together gelatin mixture and yogurt. Fold in all of whipped topping except 1/2 cup. Put remaining 1/2 cup topping in refrigerator to be used for garnish just before serving. Spread mixture into crust. Refrigerate at least 4 hours or until set. Cut pie into 8 slices. Garnish each slice of pie with 1 Tbsp. whipped topping, 1 strawberry and 2 Tbsp. blueberries. Makes 8 servings.
