Feature Recipe: Mandarin Orange Delight


This is a recipe that's as delicious as it is versatile. This can be served as a salad or dessert. It's tangy and refreshing - perfect for the warm weather.

  • 2 (0.3 oz.) boxes sugar-free orange-flavored gelatin
  • 1 cup boiling water
  • 1 cup orange sherbet
  • ½ cup cold water
  • 1 container (8 oz.) frozen fat-free whipped topping, thawed
  • 2 (11 oz.) cans mandarin oranges, canned in light syrup and well drained
  • Leafy greens

Add boiling water to medium bowl. Sprinkle in gelatin; stir until gelatin dissolved. Add sherbet and cold water. Stir until dissolved. Refrigerate for 15 minutes until slightly thickened, but not set. Stir in all of whipped topping except ½ cup and 1½ cans of mandarin oranges. Mix with electric mixer on low speed for 1 minute. Pour into 8-inch square glass pan. Refrigerate until firm, about 2 hours. To serve, cut into squares and serve on plate lined with leafy greens. Garnish with remaining whipped topping and oranges. Makes 9 servings.
